Reynolds Parchment Paper is not just for holiday cookies

Even though you’re trying to lose weight – and all your friends know it – you’ve probably been invited to a cookie swap party. You know, a party where each participant brings cookies to swap with friends along with a copy of the cookie recipe.

Reynolds Minttens CookiesI was invited to two cookie exchanges this month, and I couldn’t attend either of them because of a my new job (I’m now a community manager at CafeMom.com), and because I was already going out three times that week to parties and a holiday concert. Like I had time to bake let alone go out two more times!

But since you don’t want to get side tracked on your weight loss journey, give the recipes and invites to a friend, put your arts and crafts supplies in the tin, and keep the parchment paper to make a delicious, low calorie – Pesto Snapper en Papillote (in paper). This would be a perfect meal on either Weight Watchers (only 4 POINTS per serving) or the Extreme Fat Smash Diet.

Pesto Snapper en Papillote
Number of Servings: 4

Ingredients:

  • Pesto Snapper en Papillote Reynolds® Parchment Paper
  • 4 red snapper fillets (4 to 6 oz. each)
  • 4 teaspoon prepared pesto sauce
  • 1 cup grape tomatoes, halved
  • 1/2 yellow bell pepper, cut into rings

Directions:

  1. Preheat oven to 400°F. Tear off four 15-inch sheets of Reynolds Parchment Paper. Fold each sheet in half and crease it in the center. Unfold.
  2. Place 1 snapper fillet evenly one-half of each sheet near crease. Spread 1 teaspoon pesto onto each snapper fillet. Top each fillet with bell pepper rings and tomatoes.
  3. Fold over other half of sheet to enclose ingredients. Starting at top corner, make small overlapping folds down entire length of packet to seal edges together. Twist the last fold several times to make a tight seal. Repeat to make 4 packets. Place parchment packets on large cookie sheet.
  4. Bake 15 to 17 minutes. Place parchment packets on dinner plates. Carefully cut an X in top of each packet to allow steam to escape. Serve immediately.

That cookie swap sounds awesome! I’m trying not to eat any refined sugar (due to a sugar addition) but if I did …I’d so be hosting one of those parties.
