Customizing your homemade ice cream bars

Summer should be a time to relax and enjoy time at the pool, picnics at the park, and trips to the beach.

Even better, I made this ice cream dessert recipe even more wholesome by using dried fruit and unsweetened coconut instead of sprinkles.

Also, if you’re dairy free or vegan, you can choose a coconut or soy milk frozen “ice cream” instead of regular ice cream.

This dessert recipe is super flexible, so have fun with it and experiment with all the flavor combinations you can think of!

You can also dip them in a little vegan caramel sauce or keto strawberry sauce that are gluten and dairy free!

How to make ice cream bars with or without a pops mold

These easy homemade ice cream bars are so easy to make that even very young children can help a parent or grandparent make them with a little supervision.

(Making this ice cream bar recipe is also a fun activity to make with a parent or babysitter on rainy days when you can’t go out and play!)

The best way to make ice cream bars is in popsicle molds. There are so many available out there and you’ll find that once you purchase a set you like, you’ll make ice pops and ice cream bars all summer long!

Don’t have time to get popsicle molds? Then make this ice cream bar dessert recipe in mini-paper cups with wooden craft sticks.

Otherwise, the only other trick is having the patience to wait for the ice cream bars to set up in your freezer. To get the bars good and frozen, you’ll have to wait until the next day to enjoy them.

Homemade Ice Cream Bars Recipe

Ingredients

  • 2 pints ice cream – your favorite gluten free flavor(s), regular or dairy free
  • gluten free cereal – your favorite flavor(s)
  • Dried fruit (papaya, cranberries, raisins, etc.) cut into small pieces (optional – for “sprinkles”)
  • Unsweetened shredded coconut (optional – for “sprinkles”)
  • Ice pop mold or mini-paper cups
  • Wooden craft sticks

Instructions

  1. Remove the ice cream from the freezer to soften.
  2. Scoop out the ice cream into a medium bowl and stir until creamy.
  3. In a small bowl, add enough ice cream for one ice cream pop. Take a handful of gluten-free cereal and as you’re adding it to the bowl, crush it with your hand. Mix cereal and ice cream together and crush any bigger pieces with the back of your spoon.
  4. Carefully spoon ice cream and cereal mixture into ice pop mold. Repeat until all molds are filled.
  5. Place lid of ice pop mold on top and place wooden craft sticks in the molds.
  6. Place any remaining ice cream back in the container.
  7. Freeze ice cream pops overnight.
  8. If adding “sprinkles,” soften remaining ice cream inside their original containers by leaving them on the countertop. While the ice cream is melting, place a cookie sheet in the freezer.
  9. Place the shredded coconut and cut dried fruit on to plates.
  10. Remove ice cream crunch bars from mold per manufacturer’s instructions. (Usually, you place the mold in warm water. Then you gently remove the bars.)
  11. Quickly dip the end of the ice cream crunch bar in the melted ice cream. (Dip about 1/3 to 1/2 or so.) Then roll or tap the end of the bar in the “sprinkles.” Then place the ice cream bar on the tray in the freezer. Repeat with the remaining bars.
  12. To serve, remove the cookie sheet from the freezer and let warm on your countertop until you can easily remove the ice cream crunch bars. Enjoy!
