FAQs

Plan ahead to make the best chocolate gluten free pecan pie

Holiday season baking does require some planning, especially when it comes to gluten and dairy-free baking.

Take the time to buy all your ingredients in advance. The gluten-free pecan pie crust, sorghum syrup, and dairy free chocolate chips may not be available at your grocery store.

Since you’re cooking for people with special dietary needs you may need to drive to several grocery stores, a health food store, and a liquor store. You may have to order some ingredients online, too.

This chocolate pecan pie is so heavenly that your efforts will be worth it!

How to make a gluten free pecan pie

What kind of gluten free crust?

I used a premade gluten free dairy free pie crust from Wholly Wholesome. I usually can find these in the freezer section at my grocery store. If yours doesn’t sell it, try your local health food store.

You can buy a Wholly Wholesome crust weeks in advance since it’s frozen. I like using their gluten free pie crusts for a Quick Quiche Recipe, too.

The only disadvantage to using premade pie crusts is that you can’t use your own cute pie dish. Try finding a cute oversized one and fitting the pie in it after cooking. That way your delicious pecan pie looks attractive when served.

Pro Tip: Don't prebake the crust. Otherwise the crust ends up being too hard to cut.

What kind of gluten-free flour?

Use a quality gluten-free all-purpose flour like Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour. This is my favorite gluten-free all-purpose flour and cooks up exactly like regular flour.

This type of gluten-free flour blend has white rice flour, xanthan gum, potato starch, etc. so it bakes up just right and you don’t have to buy extra specialty ingredients.

What kind of sweetener should I use?

This gluten-free pecan pie recipe doesn't use corn syrup. Instead, you have the choice of a variety of natural sweeteners.

You can use plain white sugar. Regular or organic is fine. An alternative is coconut sugar, which some people prefer.

If you’re trying to cut back on sugar, I recommend either powdered monk fruit sweetener or Swerve Sweetener.

Both are natural, no calorie sweeteners. They can be used 1:1 in baking just like regular sugar and have no weird aftertaste like stevia.

You could also try brown sugar, if you like a more molasses type flavor. Brown sugar is a little “wetter” than regular white sugar, so you may need to adjust cooking time.

Again, if you’re looking to cut back on the calories, there’s Swerve Sweetener, Brown, which is a terrific no-calorie substitute.

What kind of bourbon should I use?

Many people love a good Maker's Mark pecan pie, but you can use any brand of bourbon (or even rye) in this easy pecan pie recipe.

If you don’t imbibe, you can substitute cider for the bourbon. You could also add some vanilla extract to the cider. (Vanilla extract has alcohol in it.)

What is sorghum syrup?

I fell in love with sorghum when I lived in the South. It’s sort of like a cross between rice and maple syrup.

You can find sorghum syrup online and at beer and wine making stores.

If you don't want to order sorghum online, feel free to substitute pure maple syrup and turn this into a bourbon maple pecan pie. You can also use agave nectar.

How to toast pecans

1. Spray a skillet with a little cooking spray, then add the chopped pecans. (You can chop them by hand or in a food processor.)

2. Toast over medium heat until browned and fragrant. (The pecans should be a shade darker than they originally were.)

3. Remove the toasted pecans from the skillet to cool.

Pro Tip: The best way is to buy more pecans than you need. That way you can snack on them and use them in recipes like Blueberry Muffin Cake.

Buying a big bag also is a good insurance policy in case you burn the pecans when toasting them.

I can’t tell you how many times I’ve done that because I’ve walked away to do something else and then forgot they were on the stove.

What kind of chocolate?

I recommend using Enjoy Life Mini Chips, Mega Chunks, or Morsels in this chocolate chip pecan pie recipe. You can use either the semi-sweet or dark chocolate varieties.

Enjoy Life Chocolate is gluten free, dairy free, and vegan.

What kind of buttery spread?

Since this a gluten-free dairy-free pecan pie, I recommend using a tasty vegan butter like Earth Balance.

You can also use coconut oil (the kind that is solid at room temperature). But I prefer a vegan butter or non-dairy substitute so you get that buttery flavor.

Can you make this into a vegan pecan pie?

I haven’t tried making this into a pecan pie recipe without eggs. Eggs are super important into baking this into a delicious, gooey pie.

So, I’d be worried that an egg substitute like The Neat Egg or Bob’s Red Mill Egg Replacer wouldn’t work.

How do you know the pecan pie is properly baked?

Make sure to bake the pie long enough that the pecan pie filling is set.

The top of the pie will set but the center may be slightly gooey. (Test by jiggling the pan. The center may move a bit, but the sides won’t.)

If the entire pie jiggles, put it back in. Then bake the gluten free pecan pie recipe some more.

How to serve the pie

Serve your gluten free pecan pie with a scoop of dairy free vanilla ice cream.

Reddi-Wip makes non-dairy almond and coconut milk whipped cream that you can add on top of the pie slices.

Try whipping up some chilled coconut cream on your own if you can’t find dairy free whipped cream at the store.

Cover the leftover pie with plastic wrap and store in the refrigerator. Leftovers can be reheated for a few seconds in the microwave.
