I am newish to the gluten free community, having self diagnosed myself. I also realized that it isn’t too hard, I just had to cut out the baked goods. Once you get over that hump, there is lots to eat!
Alissa, I find it very easy cooking things that are naturally gluten free like fish, chicken, chili, etc. But at some point you miss having toast, cereal and pasta, unfortunately. I hope you can join us at http://www.udisglutenfree.com/community!
