I’ve done a lot of egg entrees here at This Mama Cooks, like:
- Spinach and Cheddar Frittata
- Potato and Pepper Frittata
- Corn and Green Chile Frittata
- Frittata with Spaghetti and Tomato
- Eggs Florentine with Sun-Dried Tomato Pesto
Still, I like my eggs cooked as plain as possible and usually scramble or poach them. I recently purchased a pair of Fusionbrands Poach Pods, which makes poaching eggs incredibly easy. (See my post How to poach an egg for other ways to make poached eggs.) These days I serve them up with toast for dipping into the egg yoke and broiled tomatoes.
