Honey week: salsa’s a little sweeter with honey

Honey Strawberry SalsaAfter our recent honey sampling, I’m inspired to use honey more when I cook. Since May is National Salsa Month, why not use some honey to sweeten up a fruit salsa? (Recipes courtesy of the National Honey Board.)

You can use these salsas on fish or chicken, or eat them straight up with homemade baked tortilla chips – see my one Weight Watchers POINTS recipe below.

Remember that a reasonable portion of salsa is ZERO Weight Watchers POINTS. If you find yourself eating more than a half cup of these salsas, don’t forget to add the POINTS to your tracker.

Honey Strawberry Salsa
Makes 3 to 4 cups

  Ingredients:

  • 1-1/2 cups diced sweet red peppers
  • 1 cup sliced fresh strawberries
  • 1 cup diced green bell peppers
  • 1 cup diced fresh tomato
  • 1/4 cup chopped Anaheim pepper
  • 2 Tablespoons finely chopped cilantro
  • 1/3 cup honey
  • 1/4 cup fresh lemon juice
  • 1 Tablespoon tequila, optional
  • 1/2 teaspoon crushed dried red chili pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  1. Combine all ingredients in glass container and mix well.
  2. Cover tightly and refrigerate overnight to allow flavors to blend.
  3. Serve on grilled fish or chicken.

Pineapple-Kiwi Salsa

Pineapple-Kiwi Salsa Ingredients:

  • 1 can (8 oz.) crushed pineapple, undrained
  • 2 medium kiwifruit, peeled and chopped
  • 1/4 cup honey
  • 1 teaspoon finely chopped crystallized ginger

Directions:

  1. In small bowl, combine undrained crushed pineapple, kiwi fruit, honey and crystallized ginger.
  2. Cover and refrigerate for up to 1 week.

Homemade Weight Watchers Tortilla Chips
8 chips = 1 serving

Ingredients:

  • 4 medium corn tortillas
  • 1 tsp olive oil
  • 2 sprays of cooking spray
  • 1/8 tsp salt

Directions:

  1. Preheat oven to 350°F.
  2. Brush each tortilla with 1⁄4 teaspoon oil.
  3. Cut each tortilla into 8 triangles. Using a pizza wheel cutter makes this a snap.
  4. Place triangles on a large nonstick baking sheet coated with cooking spray. Or if you have a silicon mat for your baking sheet, forego the spray.
  5. Sprinkle salt over triangles.
  6. Bake at 350°F for 10 minutes or until triangles are lightly browned at edges.
  7. Remove from oven and cool.

Weight Watchers POINTS for 8 chips = 1

This salsa is a good idea! We have a farmer here in this area that grows the MOST delicious organic strawberries in the whole world! Well at least in this area, and this will be perfect for them. I make a strawberry balsamic vinaigrette that I am going to do a post on this early summer. Maybe I will see you at BlogHer in SF?
