A healthy Super Bowl dip recipe from Weight Watchers

Hope you’re ready for another healthy dip recipe because here’s one from The Weight Watchers Momentum Cookbook, which is available for $9.95 at a Weight Watchers meeting near you.

Black Bean-Tomatillo Dip

Makes 6 servings

Ingredients:

  • j0438499 2 (15½ ounce) cans black beans, rinsed, drained
  • 1 (12 ounce) can tomatillos, drained, chopped
  • 1 (4 ounce) can chopped green chiles, drained
  • 3 scallions, chopped
  • ½ cup chopped fresh cilantro
  • 3 tablespoons lime juice
  • 2 tablespoons water
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Directions:

  1. Combine beans and tomatillos in a food processor and process to a chunky puree.
  2. Transfer mixture to a large bowl and add remaining ingredients.
  3. Stir until well combined.
  4. Serve with crispy, juicy jicama sticks. Just peel a jicama and cut into sticks or slices.
