One of the foods I’m really enjoying on my weight loss journey with the Extreme Fat Smash diet is brown rice. Since brown rice takes a long time to cook (45 minutes or more) I cook up a couple of cups and put it in the refrigerator for future use. Precooking brown rice cuts down prep and cook time to a mimimum.
Brown Rice, Black Beans and Red Onions
Preparation time: 5-10 minutes
Makes: 1 serving
- 1/2 cup Brown Rice
- 1/2 cup Black Beans Beans
- 1 tsp. Extra Virgin Olive Oil
- 1 Tbsp. Chopped Red Onion
- Seasoning
Directions:
- Saute onion in canola oil until translucent.
- Add cooked brown rice and drained beans along with desired seasonings. (I used a tablespoon of barbeque sauce. You could try cajun spices or just some salt and pepper.)
- Saute until heated through.

Just de-lurking to say that I really enjoy the blog. We used your Maryland style cream of crab soup recipe on Tuesday and it was fabulous,[enough to become a blog topic!]. I find myself checking in to see what your cooking a lot!

I buy the unsalted cans of diced tomatoes and added some drained to this dish along with a handful of spinach slivers. I always look for Ops to add extra vegies!! Popped a serving into a whole wheat tortilla and sliced them for a pretty presentation. It was enough for TWO! yummmy!
