My book club is reading A Passage to India by E.M. Forster. I’m hosting the next meeting, so I offered to make a curry. But I’m pretty wimpy and don’t like super spicy stuff. And I’m on Weight Watchers, so what’s a good hostess to do?

I can make the chicken curry that morning my my slow cooker. I’ll also triple it (or more) since I have a large crock pot that can handle it. That way I can have leftovers for the next day for both me and my family if my book group of 11 ladies doesn’t eat the whole pot.
Sweet and Sour Slow Cooker Chicken Curry

Pop this Indian-inspired dish into a slow cooker and enjoy a tasty, hot dinner, hassle-free.
Ingredients:
- 1 pound uncooked boneless, skinless chicken breast, cut into 1-inch pieces
- 1 large green pepper(s), cut into 1-inch pieces
- 1 large vidalia onion(s), sliced
- 14 1/2 oz stewed tomatoes
- 1/2 cup mango chutney
- 1/4 cup water
- 2 Tbsp cornstarch
- 1 1/2 tsp curry powder, or more to taste
Directions:
- Place chicken, pepper and onion in a slow cooker; top with tomatoes.
- Mix together remaining ingredients in a small bowl. Pour over chicken mixture, cover and cook on low heat for 4 hours.

Ahhh, there’s nothing like Weight Watchers and food blogging. I just started myself last week, and I have to admit, it was pretty tough. I also review restaurants for my local alt-weekly and although I’ve got the motivation (and pounds), I kept getting derailed. Gotta keep at it though . . .
Cooking chicken breast for four (4) hours?!?!?!? Indians do tend to cook vegetables to death by our standards, but I really wonder how chicken stands up to that much cooking — even in a slow cooker. Is it really tasty — or were you just being polite?
I tried this recipe and it was delicious! My husband and 3 kids all loved it! I served it with brown rice. It was a big hit in my home and I will be making this again! I had frozen chicken breasts so I actually boiled them until they were not quite done then cut them up and put them into the crockpot. They were not over cooked and has wonderful flavor. I think the Chutney give great flavor! I had never used that before. I doubled the recipe and added an extra green pepper and 1 extra can of tomatoes. YUM!
I just need to head out and purchase a slow cooker and then we can try this one. I’m sure my family would love it.
