I especially liked this recipe since I have a bag of frozen chicken breasts slowly getting freezer burned. I’ll use them instead of the thighs, and premade Italian bread crumbs for the fresh crumbs and seasoning.
Baked Honey-Mustard Chicken
Ingredients:
- 3 tablespoons honey
- 3 tablespoons yellow mustard
- 8 chicken thighs, rinsed and patted dry
- salt
- freshly ground pepper
- 2 cups fresh bread crumbs
- 1/4 cup Italian herb seasoning mix
Directions:
- Heat oven to 350F.
- Combine honey and mustard in a small bowl.
- Brush over chicken thighs.
- Season with salt and pepper.
- Combine bread crumbs and seasoning mix on plate.
- Roll chicken in crumbs to coat.
- Place chicken thighs in a greased baking pan.
- Bake until juices run clear, about 30 minutes.

I actually cooked that Honey Mustard Chicken recipe tonight. It was the perfect fast meal for us since the Mama’ mobile had to drop off the 15yo at Drill practice, the 6yo at Tae Kwon Do and the laundry to the Cleaners… Phew…. Where’s the Calgon!!
