"Remember the yummy shrimp dish Brook brought to Kurt and Karen’s? Well, I got the recipe from him and it is a cinch to make. This has become a summer staple at Casa Dargen. -M "
-
1 lb shrimp
-
1/2 cup lime juice
-
1/2 medium white onion diced
-
1/3 cup chopped cilantro (Michelle D. uses less)
-
1/2 cup ketchup
-
2 tablespoons hot sauce
-
2 tablespoons olive oil
-
1 cup diced cucumber
-
1 small cubed avocado
-
salt to taste
-
limes cut into small wedges
Directions:
Mix up all these ingredients in a bowl and let it chill in the refrigerator for a little while. Serve with saltine crackers or corn chips for a traditional garnish. Michelle D. serves it with either flour tortillas or crunchy corn tortillas. She also buys precooked shrimp with the tails on, and then takes the tails off herself. Also, Michelle uses more hot sauce than the recipe calls for, either Tamazula or Valentina with a few dashes of a hotter sauce.
