Matrimonial Bars

I’m always looking for recipes for baked goods that don’t have eggs since Boo Girl is allergic to them. I came across this recipe in American Profile magazine for Matrimonial Bars. While I haven’t had a chance to try the recipe out, it looks delicious!

Matrimonial Bars – by Mildred Hennon of Newton, Iowa

“Though I’m 91 years old, I still enjoy baking. This Swedish recipe was given to me by a friend many years ago.”

Crumb mixture:

  • 1 3/4 cups quick oatmeal
  • 1 3/4 cups sifted all-purpose flour
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1 cup soft butter (no substitutes)

Filling:

  • 8 ounces chopped dates
  • 1/2 cup water
  • 1 cup sugar

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine crumb mixture ingredients and stir until well blended.
  3. Press half of mixture into a well-greased 8-by-8-inch baking dish.
  4. In a small saucepan, stir together filling ingredients.
  5. Cook and stir over medium heat until bubbly and smooth.
  6. Pour filling evenly over crumb mixture.
  7. Spread remaining crumb mixture over filling.
  8. Bake for 25 to 30 minutes, until golden brown.
  9. Cut into squares and serve when cool.

Tips: Try adding chopped walnuts or pecans to the crumb mixture.
