After determining that Boo Girl really doesn’t like cake or frosting (what a weird child) I’ve decided to look into ice cream cakes.
I found an enticing list here. Which one to choose?
Then there’s the dilemna of leftovers. After scarfing down last week’s Super Bowl party’s leftovers the entire week, I gained three pounds. So I’m thinking of making mini-ice cream cakes after reading about Small-Batch Baking by Debby Maugans Nakos in last week’s Denver Post.
I like her idea of making small, single or double-serving desserts so much, I’m going to have to get her book.
Also, if I do make mini-ice cream cakes, I can make a no-fat, no-sugar one for me and give the kids and Big Bad Dad the fattening ones. Now I just have to get some Kaiser La Forme Mini Springform Pans. Aren’t they the cutest? And I can make regular mini-cakes, too, like those times when I’m making cupcakes and have leftover batter.
Isn’t cake making fun?

I have some similar mini pans and use them all the time!
Great for mini cheesecakes!
Mmmm, ice cream cakes! Boo Girl will love it! By the way, it was blast hanging out with you on Friday.
*sniff*
I love how it always smells like chocolate cake in here!
kisses to you cooking mama
Just bought the book and the pans. My two year old son likes to bake a lot, but I can’t make a whole cake every couple of days or two for obvious reasons, so we’ll se how these work out. Thanks for the information.
Thanks for sharing the name of that book–it looks really interesting. It would probably a lot healthier to make a small brownie and eat all of it than eating the whole big pan. . .
