Besides planning for my friend’s baby shower, I’m also planning my children’s birthday cakes – a Mickey Mouse cake for Monkey Boy’s birthday in February (I got the discontinued full body pan on eBay.) And a Minnie Mouse cake in March for Boo Girl.
However, Boo is allergic (we think) to eggs. Luckily, I found this recipe for egg substitutions on The Food Allergy & Anaphylaxis Network (FAAN).
For each egg, substitute one of the following in recipes:
- 1 tsp. baking powder, 1 T. liquid, 1 T. vinegar
- 1 tsp. yeast dissolved in 1/4 cup warm water
- 1 1/2 T. water, 1 1/2 T. oil, 1 tsp. baking powder
- 1 packet gelatin, 2 T. warm water.
Do not mix until ready to use. These substitutes work well when baking from scratch and substituting 1 to 3 eggs.
So now Boo Girl can have her cake and eat it, too.

I love to bake and decorate cakes. That shower one looks like it would give me a challenge for sure!
I just came across your site….I just thought I would let you know that the recipe for the double layer birthday cake listed on the FAAN website is actually pretty good. My daughter is allergic to eggs and we have used that recipe for her past two birthdays and it tastes great. Just thougth I would let you know!

I consider myself still a novice when it comes to baking cakes. I am going to buy Wilton’s Choo Choo Specialty Cake Pan, because I want to bake Thomas The Train birthday cake for my son’s 3rd birthday.
What does it mean when the recipe requires 6 cups of batter…does that mean I have to buy 2 boxes of cakes mixes or? I am baffled!

thanks for this recipe because more people is allergic with egg
